
I love to eat sweets!! It is usually a problem considering the fact that I have diabetes. But, I have found that if I bake or cook and I can share it, I get my fix and I eat a whole lot less. I also love to read cookbooks or scour the Internet to compare recipes. My favorite recipes consist of just a few basic ingredients. I also love baking using ingredients that are in season. This is why I love the older recipes from my grandmother's era. I'm starting with my favorite category...dessert! And, growing up in the south, meringue pies are always a favorite. My grandmother made the best chocolate pies. It took me a long time to learn how to get the custard portion the desired thickness. When I started researching chocolate meringue pies, I found that they were basically all the same but that there were 3 ingredients that were used in various forms. The milk could be milk, cream or evaporated milk. The chocolate could be chocolate chips, baking squares or cocoa. And, the thickening agent could be flour or cornstarch. This recipe was found on-line and it is my personal favorite. So, thanks to Margaret, whoever you are. Your pie is the best!
Margaret's Chocolate Meringue Pie
Mix sugar, cocoa, flour using a wire wisk. In a saucepan, mix egg yolks and evaporated milk using a wire whisk, when well blended, add the dry ingredients. Whisk over medium heat until thickened. Remove from heat and add butter. Stir until melted and smooth. Pour into a baked deep dish pie crust. Mix egg yolks and 1/3 cup of sugar in a blended fitted with a wire whisk at a high rate of speed until peaks form. Carefully cover custard mixture with meringue and bake at 350 until brown.
This pie reminds me of growing up, eating Sunday lunch with my grandmother, family dinners and it's hard to find this at any chain type restaurant. So, in my book, it's just one of those special things to enjoy in life. I hope you like it too. If you have a better recipe, I'd love to try it!
